Biographical Sketch:
Ana Lucia Barretto Penna has a degree in Food Engineering from the Educational Foundation of Barretos (1984), MSc (1994) and Ph.D. (2000) in Biochemical-Pharmaceutical Technology from the University of São Paulo. Held postdoctoral in the area of Food Engineering Department of the Biological Systems Engineering at Washington State University - USA (2004) and in the area of Microbiology at Dipartimento di Genetics, Anthropology and the Evoluzione Università Degli Studi di Parma - Italy (2010). He is lecturer in Technology of Milk and Dairy Products. Holds the position of Assistant Professor in the Department of Engineering and Food Technology, Institute of Biosciences, Letters and Exact Sciences, UNESP, Sao Jose do Rio Preto, SP, Brazil. He work focus on Applied Science and Food Technology, with an emphasis in Dairy Technology, on the following topics: probiotic dairy products, fermented milk, dairy products, low calorie, lactic acid bacteria.
