This first discussion in the session, “How do I Validate That?”, reviews current regulatory aspects of food process validations and considers food categories that instead may have guidelines and scientific history for direction on pathogen/hazard reduction. Also considered are the different types and components of food processes, and credible validation studies, and how these factors are currently applied to manufacture food for consumer safety.
