Biographical Sketch: imon Dawson is a chartered scientist, food safety lecturer and QMS advisory consultant at Cardiff Metropolitan University, Wales. He spent the first 12 years of his career working in a combination of technical management roles within food manufacturing and retail organisations. Simon has conducted food safety audits throughout Europe and Asia, and currently advises Welsh SME food manufacturing companies on food safety, quality and best practice standards. Simon is an active member and advisory consultant for the Institute of Food Science and Technology (IFST), the leading independent qualifying body for food professionals in Europe and the only professional body in the UK concerned with all aspects of food science and technology.
