Biographical Sketch:
Anna Roccato is a veterinarian working as a researcher at the OIE Reference Laboratory for Salmonellosis at Istituto Zooprofilattico Sperimentale delle Venezie (Padova, Italy). Since October 2013, she has been a Ph.D. candidate at Ghent University. The main aim of her research is to study the effect of the consumer behaviour and preferences on food microbial safety; since 2010, her studies are focused on the replication of the consumer storage and handling of food in order to assess its effect on the two most important foodborne bacteria: Salmonella and Campylobacter. Moreover, she has addressed the study of artisanal products, mainly salami and sausages, in order to understand the production system, and the microbial aspects and provide effective tools for food business operators.
