Biographical Sketch: Andrea Gianotti has completed his PhD in Food biotechnology at the University of Bologna (Italy) where he teaches Food Microbiology. He participated to several national and European research
projects. He is Coordinator of an EU funded project on functional bakery foods and participates to other ones on functional foods and recovery of bioactive compounds from by products. He collaborated with different national and international food and ingredient companies dealing with microbial food safety, food fermentations and bioactive recovery. He has published more than 70 publications including 28 papers and 6 book chapters.
